Water is pouring down from the sky here in the Netherlands, but we've been promised sunny weather - we'll just wait and see.
My story is well underway - I made Thursday my deadline.
But onto the feast! I am somewhat of a breakfast enthusiast. I will never discriminate against any type of food - maybe fungi - but the breakfast is my favorite meals of the day. And because I always make my meals look like a little party, I thought I'd share some of my creations with you here. So sit back and enjoy, recipes are to be found at the bottom - they are all my own original recipes as I like to experiment with my food.

Recipes - all recipes are for one person
#1 - Cocoa-banana pancakes with fresh berries
- 2 eggwhites
- 1 banana
- 1 tbsp of raw cocoa powder
- a few drops of stevia extract
- cinnamon to taste
- raw cocoa nibs to sprinkle on the top
- Organic honey
Split two eggs and add a mashed banana, the cocoa powder, the stevia and the cinnamon. Wisk until smooth. Put some coconut oil in the pan and make three small piles of your mixture. Continue untill everything is gone!

#2 - Corn porridge with frozen summer fruits
- 30 grams of corn flakes (not those corn flakes - these)
- 150 ml of vanilla flavored rice milk
- Stevia extract
- 1 cup of frozen summer fruits
Add the flakes and the milk in a pan together and bring to a boil, let it simmer for 15 minutes. Add a few drops of stevia extract and how could I forget, a dash of cinnamon!
#3 - Oven baked banana with Greek yogurt, mulberries and shredded coconut
- 150 grams of Greek yogurt
- handful of mulberries
- 10 grams of shredded coconut
- 1 banana
Set the oven to 220°C (428 °F), slice the banana and put in the oven for 15 minutes.

#4 - Greek yogurt and fruit festivities!
- Fruit! A banana, mixed frozen summer fruits and some fresh blueberries
- 150 grams of Greek yogurt
- Cranberry syrup
#5 - Fruit parfait with beetroot-chocolate cake
- A beetroot chocolate cake - I'll try to get my hands on that recipe because it's to die for! It's gluten free and contains almond flour, shredded beetroot and raw cocoa powder among other things.
- Some Greek yogurt to style it up
- A banana
- Agave sypup
- Dried maple syrup (the little sugary things on top)
